                     NKWOBI (GOAT OR COW LEG)         NWKOBI is the Igbo name for spicy goat/cow leg  cooked and served in rich chilly gravy. Nkwobi is often mistaken for ISI EWU,but they are not the same.ISI EWU is also an Igbo recipe made with Goat or cow head.LET GETS STARTED INGREDIENTS: -Goat/cow foot -palm oil -ground hot pepper -ground potash(kaun,keun,akanwu) -Onions -Salt -blended cray fish -seasoning -bitterleaf -utazi -Nutmeg(ehuru) Directions: √ De hoof(goat/cow foot)and wash with sponge and warm water thoroughly. √ Chop the foot into small pieces,preferably cubes and rinse once more. √ Put the meat into a large pot,season lightly and cook on moderate heat for about 45mins √ When the meat is tender, pout out into a bowl with some of the stock. √ In a separate bowl,combine the pepper, chopped onions,crayfish,salt and seasoning. √ Add warm water and mix thoroughly √ Place a clean pot on the cooker and add palm oil √ heat it slightly, then add the edible potash and

                      AYAMASE STEW       AYAMASE stew also known as designer stew is made with palm oil, locust beans,,bell peppers and assorted meat with egg. We all know how we derive the ofada (stew) from, it is derived from the originally rice known as ofada rice. Ofada stew has a very unique Aroma/flavour. For the type of stew make sure to use plenty of the green or unripe bell pepper,in other to give you that green black color,that's the original look for ofada stew. INGREDIENTS : - 7 large green bell pepper -3 green Chilli pepper -4 Large red onions -2 lbs assorted meat -Smoked dried fish -Crayfish -1/2 Cup palm oil -2 tbsp seasoning -Salt to taste - 1tbsp locust beans.
