HOW TO MAKE NKWOBI

                     NKWOBI (GOAT OR COW LEG)

       NWKOBI is the Igbo name for spicy goat/cow leg  cooked and served in rich chilly gravy. Nkwobi is often mistaken for ISI EWU,but they are not the same.ISI EWU is also an Igbo recipe made with Goat or cow head.LET GETS STARTED

INGREDIENTS:
-Goat/cow foot
-palm oil
-ground hot pepper
-ground potash(kaun,keun,akanwu)
-Onions
-Salt
-blended cray fish
-seasoning
-bitterleaf
-utazi
-Nutmeg(ehuru)

Directions:
√ De hoof(goat/cow foot)and wash with sponge and warm water thoroughly.
√ Chop the foot into small pieces,preferably cubes and rinse once more.
√ Put the meat into a large pot,season lightly and cook on moderate heat for about 45mins
√ When the meat is tender, pout out into a bowl with some of the stock.
√ In a separate bowl,combine the pepper, chopped onions,crayfish,salt and seasoning.
√ Add warm water and mix thoroughly
√ Place a clean pot on the cooker and add palm oil
√ heat it slightly, then add the edible potash and cover for a minutes
√ Stir the oil and the potash vigorously until a thick mash is formed.
√ Add some water to dilute
√ Take the mixed pepper,onions,crayfish and seasoning and add in the boiling mixture, Cover the pot and let it simmer for about three minutes 
√ Put the goat or cow foot into the serving mortars or the traditional earthen ware bowls and pour in the hot mixtures 
√ Garnish with the fresh utazi leaves and sliced onions and serve with drinks
